Is it spelled "saccha" or "sacha"?

Historically, Steve has spelled with only one "c", but that doesn't sit comfortably with Kevin, who prefers that it be spelled with two. This is because the origin of the name "Sac(c)ha the Yeast" refers to the scientific name for brewer's yeast, which is Sacchromyces cerevisiae. If we derive "Sac(c)ha's" name from their scientific name origin, then the correct spelling should be "Saccha"
